Whatcha Munchin’, Katy?

We are still devouring blueberries in our household.  I’m convinced that my 2 year old just swallows them whole; he consumes them that quickly.

A friend gave us 3 ginormous zucchini from their garden, so I went on a mission to use it all, and I was reminded of this awesome cake I made last year:  Blueberry and Zucchini cake with lemon frosting.  I pulled out the recipe and found that I made some notes “Super moist.  Makes way too much icing. Try making them into muffins without the icing.”  (Thanks to my mom for getting me in the habit of critiquing recipes, and making notes.)
So I made a batch of “muffins” and they were as delicious as I remember the cake.  If the muffins have blueberries AND zucchini in them….they must be okay for breakfast, right?
